      I don't really want any major gameplay changes like Sword of Mana apparently does, just some colorization of the sprites, while keeping the same basic pixel art.

    Actually M2 probably could have done this within the emulator itself without having to hack the ROM; there's already different display filters you can cycle between by pressing ZR; the game could just force certain filters on you based on triggers from different events

      that way the different color dragons (e.g. the red one at the top of this thread) could actually be different colors
